Lazy Shepherd’s Pie
Ingredients:
- 1/2 box (13oz) mashed potatoes mix (along with butter, milk, and salt per package instructions)
- 1 lb ground beef
- 1 bag (12oz) frozen mixed veggies
- 1 can (10.75oz) tomato soup
- 1 tbsp of Worcestershire sauce
- 1 cup of Ketchup
- 1 packet (1.5oz) beef stew seasoning mix
- 1/2 cup water
- 1-2 cups shredded cheddar cheese
Instructions:
- Preheat oven to 400°F.
- Prepare mashed potatoes according to package instructions (using half of a 13oz box or more for larger servings).
- In a large skillet over medium heat, brown the ground beef. Drain excess grease.
- Add tomato soup, ketchup, worcestershire, frozen veggies, beef stew seasoning, and 1/2 cup water to the beef. Stir and simmer for 5-10 minutes on low heat.
- Grease a 9×13 baking dish. Spread the beef mixture evenly in the dish, top with the prepared mashed potatoes, and sprinkle with cheese.
- Bake uncovered on the center rack for about 30 minutes or until the cheese turns golden brown.
Recipe Notes:
- Any type of mashed potatoes works for this recipe (boxed, homemade, leftover, store-bought, etc.). Ready-made mashed potatoes from the deli section of most stores can be used for added convenience. For homemade, approximately 4 large russet potatoes are needed.
- To enhance flavor, consider sautéing chopped onions before adding the ground beef if your family enjoys them.
