Lazy Shepherd’s Pie

Ingredients:

  • 1/2 box (13oz) mashed potatoes mix (along with butter, milk, and salt per package instructions)
  • 1 lb ground beef
  • 1 bag (12oz) frozen mixed veggies
  • 1 can (10.75oz) tomato soup
  • 1 tbsp of Worcestershire sauce
  • 1 cup of Ketchup
  • 1 packet (1.5oz) beef stew seasoning mix
  • 1/2 cup water
  • 1-2 cups shredded cheddar cheese

Instructions:

  1. Preheat oven to 400°F.
  2. Prepare mashed potatoes according to package instructions (using half of a 13oz box or more for larger servings).
  3. In a large skillet over medium heat, brown the ground beef. Drain excess grease.
  4. Add tomato soup, ketchup, worcestershire, frozen veggies, beef stew seasoning, and 1/2 cup water to the beef. Stir and simmer for 5-10 minutes on low heat.
  5. Grease a 9×13 baking dish. Spread the beef mixture evenly in the dish, top with the prepared mashed potatoes, and sprinkle with cheese.
  6. Bake uncovered on the center rack for about 30 minutes or until the cheese turns golden brown.

Recipe Notes:

  • Any type of mashed potatoes works for this recipe (boxed, homemade, leftover, store-bought, etc.). Ready-made mashed potatoes from the deli section of most stores can be used for added convenience. For homemade, approximately 4 large russet potatoes are needed.
  • To enhance flavor, consider sautéing chopped onions before adding the ground beef if your family enjoys them.
